•  5 eggs
  •  150 grams sugar
  •  150 grams flour
  •  1 tsp baking powder

Decorations and filling:

  • 1 dl apple juice for the cake
  •  7 ½ dl heavy cream
  •  2 bowls of strawberries
  •  1 dl blueberries
  •  10 fresh mint leaves

How to bake the cake:

Whisk the eggs and sugar until stiff and fluffy. Sift together flour and baking powder and stir it into the egg mixture. Bake in greased dish, 24 cm in diameter, at 160 º C for 45 minutes. Cut the cake into three layers and soak them well with apple jui ce. Whip the heavy cream and then divide into two bowls.  In one bowl mix chopped strawberries. Spread the strawberries and cream mixture on top of each layer. Set the layers one on top of the other and then spread the plain whipped cream over the entire cake and sides to decorate. Decorate the cake’s edges with whipped cream from a piping bag and fresh strawberries, blueberries and mint leaves.
